One of our favorite spring camping recipes to take on a camping trip is for Easy Quesadillas! They’re hearty, filling, and super easy to make (and space efficient, too!). Grab this easy RV recipe below for your next trip in your new or used RV!
Easy Quesadillas
Ingredients:
- Flour tortillas (2 per quesadilla)
- Shredded cheddar, pepperjack, or ‘fiesta’ blend cheese: ½ cup per quesadilla (or more if you like it really cheesy!)
- Fillings: black beans, canned chicken breast, sliced jalepeno peppers, onions, or anything else you’d like
- Seasonings: taco seasoning or Ranch seasoning
- Butter
- Toppings: sour cream, salsa
You’ll also need:
- Nonstick skillet that’s slightly larger than your tortillas (for example, if your tortillas are 10”, use a 12” skillet)
- Spatula
Directions:
- Preheat cooktop to medium-low.
- While it’s preheating, lightly butter one side of each tortilla.
- Place a tortilla butter side down into the skillet and immediately sprinkle some cheese over the non-buttered side of the tortilla in the pan.
- Add other fillings of your choice and a sprinkle of seasonings.
- Place the other tortilla on top, with the non-buttered side facing toward the middle.
- Carefully flip and cook until both buttered sides of the tortilla are crispy and golden brown, and the cheese is melty.
- Remove from heat, slice, and serve with your favorite toppings.
Cooking these at a lower temp at a slower speed is perfect for getting them golden brown with melted cheese. It’s easy to rush these, but you’ll only end up with blackened tortillas and cheese that in’t melted. If your RV has an outdoor kitchen with a flat top griddle, this is a perfect recipe to use.
